While visiting Solvang I enjoyed going for walks in the morning. The town was quiet and only the bakeries were open.
This morning I was captivated by the Danish architecture that housed Birkholm’s.
Inside there were 2 huge pastry cases filled with goodies to choose from and tubs of Danish butter cookies. My mom would buy a round tin container of Danish butter cookies, wrap it, and put it under the Christmas tree each year. Those cookies were pretty good but they were pumped full of preservatives and not fresh baked.
I bought a tub of Birkholm’s fresh Danish butter cookies which had a nice assortment of flavors. My favorite was the chocolate chip one which had a mix of buttery goodness and sweet chocolate flavors. Each cookie had a delicious fresh baked flavor. Eat them quick or transfer them to an airtight container as the tub won’t keep your cookies fresh for long.
I also tried a bear claw which had a crunchy outside while the inside was soft and fluffy. In the middle was what taste like almond paste adding some sweetness along with the small amount of powdered sugar sprinkled on top. I loved the mix of flavors with this dessert which taste like an almond croissant with almond paste filling. This bear claw taste fresh out of the oven as I arrived at opening time to get my treat at peak freshness.
I look forward to the next time I’m in town my morning walk to get fresh baked Danish treats.
