Omelette with mango salsa / Maggie’s Creations

This is just one of my creations I came up with while shopping. I really love eggs so I’m always looking for a new way to make them. Unfortunately they don’t like me back so I can’t eat them as much as I’d like to. So when I do it’s a special indulgence.  

2 tablespoons real butter

10 to 12 eggs

1/4 cup almond milk

1 pound Italian sausage

2 to 3 mango’s cut up

1/2 cup onion

1 red bell pepper cut up

1 teaspoon Cilantro

1 tablespoon lemon juice

1 avocado sliced

6 to 7 Mozzarella cheese slices

 

 

 

 

 

 

 

 

 

Brown sausage with butter on medium heat. Mix mango’s, onion, bell pepper, cilantro and lemon juice in a separate bowl. Add mango mixture to sausage once sausage is browned. Keep on medium heat for about 7 to 8 minutes.

 

 

 

 

 

 

 

Wisk eggs with almond milk in a separate bowl. Add eggs to sausage mixture and cook until eggs are firm.

 

 

 

 

 

 

 

 

 

Once firm add mozzarella slices, cover and turn off heat. Let sit for 5 minutes or until cheese is melted.

 

 

 

 

 

 

 

 

 

Serve immediately with avocado slices on top. Enjoy!

Preparation time: 30 minutes.

Cook time: 25 minutes.
