I’ve used this as my go to meatloaf recipe for years. I’ve changed it up a few times using ground beef instead of ground pork and the addition of 1/2 cup sweet onion. My favorite part is the sauce on the top!
2 pounds ground pork
2 eggs beaten
1 cup rolled oats
1/2 cup catsup
1 whole bell pepper chopped
2 tablespoons Lea & Perrins Worcestershire sauce
1 teaspoon fresh ground white pepper
1/2 teaspoon salt
1/2 teaspoon fresh basil chopped
1/2 teaspoon garlic powder
Sauce
1/2 cup catsup
3 tablespoons packed brown sugar
1 teaspoon ground mustard
Preheat oven to 350 degrees and grease an 8 inch loaf pan.
Combine ground pork and eggs in a large bowl. Then add oats, catsup, bell pepper, Worcestershire sauce, white pepper, salt, basil, and garlic powder. Mix well. Transfer to loaf pan and smooth the top.
In a separate bowl whisk the catsup, brown sugar and mustard together. Then spread it over the meat loaf before baking.
Bake for 1 to 1 1/2 hours or until the inside reaches 170 degrees. Use a meat thermometer to determine inside temperature. Let it sit for 10 minutes before slicing. Serve with fresh corn. It’s also delicious served sliced thin on a sandwich.
