We were staying at the Palms and Maggie noticed there was a bbq run by celebrity chef Michael Symon here. Mabel’s features Cleveland style bbq. I love bbq so we made plans to visit.
We walked over and found the entrance through the casino. There was the scent of bbq inside. I miss the old school joints that have a smoker pumping smoke out the parking lot.
I decided on beef brisket and pork ribs. The meats are all ala carte so you don’t have to worry about getting filled up with sides.
I chose everything with the Memphis style dry rub. Ribs had a delicious coating of the dry rub which had sweet and savory flavors. Ribs were very tender and had a smoky flavor in addition to the flavors from the dry rub. I was told they use a mix of apple and cherry wood and smoke the meats on average for half a day. Beef brisket was extremely tender and had a delicious bark in addition to the melt in your mouth beef.
I added a dab of the sweet KC bbq sauce to add a bit of sweetness to the savory flavor.
I also tried an Abita Root Beer. Great tasting drink with a mix of sweetness and that unique root beer flavor I love.
I love the bbq here and will make it a point to visit again next time I’m in town.
